A What Feeds Us Recipe

If you’re looking for an easy breakfast recipe, look no further! What Feeds Us has recently cooked frittatas, an Italian dish made with fried beaten eggs, resembling a Spanish omelet. Follow along and serve up a comforting breakfast!

Mandatory Ingredients:

  • 1-2 eggs per person in your family

  • Oil of some sort (oil, butter, ghee, etc. to grease your pan)

Optional Ingredients for Fillings

We recommend at least 2-3 from list to make it delicious. Choose your favourites. You don’t need to choose all items.

  • Cheese - any kind that has a good flavour you like and that you can grate, crumble, shred or cut in small pieces to melt on top. Usually stronger flavoured or saltier cheeses tastes better, but any kind is fine if you like your cheese mild. Feel free to mix a few. Some of our favourites are: old cheddar, peppery havarti, smoked gouda, feta, blue cheese, goat, mozzarella

  • Alliums:

    • Onion, leek or scallion (chopped into small 1 cm cubes) garlic (minced)

  • Greens:

    • Spinach, kale (chopped), arugula, sprouts

  • Mushroom (chopped medium slices)

  • Pepper (chopped small 1 cm cubes)

  • Tomato - Best with salty cheese (chopped medium pieces)

  • Meat (chopped small or medium)

    • Browned ground meat, ham, bacon, sausage, lunch meat, etc.

  • Brassicas:

    • Broccoli or cauliflower (cut small)

  • Kimchi, hot sauce/chilli pepper

  • Potato (cut small into hash brown size, and will need to pre-cook a few min. We recommend steaming on stove, or putting with water in bowl in microwave and cooking 3-5 min)

  • Salt & pepper

Preparation

  1. Find a decent-sized frying pan. If you have one with a lid, this is better. Make sure it is large if you are making dinner for your family (or have two pans)

  2. Pull out your cutting board, a medium sharp knife, and clear your space.

  3. Pull your ingredients out of the fridge and have them ready.

  4. Start chopping your ingredients. Start with the ones that you will be cooking first and get at least half of them ready before you start cooking. (the rest can be prepped as you go).

  5. Put some oil in the pan. Turn on to medium heat.

Cooking Steps (depending on what you chose)

  1. Start sauteing your meat till cooked.

  2. Steam potatoes in a separate pot or microwave, then toss in the pan.

  3. Sauté alliums till glassy and/or mushrooms till soft.

  4. Sauté pepper and/or brassicas.

  5. Mix your eggs in a separate bowl. Whisk with a fork.

  6. Add your tomato and greens to the other cooked veggies and meat. Add some more oil as needed.

  7. Add Kimchi/chilli pepper and whisked eggs.

  8. Put grated/crumbled cheese on top.

  9. Put a lid on.

  10. Cook on medium/low till egg cooked through and cheese has mostly melted.

  11. Turn off the stove. Serve in wedges. Season with salt, pepper, hot sauce, ketchup, etc. (we do this last since all other ingredients and cheese and meat add some salt to the dish)

And voila! Simply cut your frittata into wedges, serve, and enjoy!
