Our What Feeds Us program has been busy in the kitchen and we have a wonderful Butter Chicken recipe for you guys!
Butter Chicken
Serves 6
Ingredients for Sauce:
1 litre heavy cream, whipping cream or coconut milk (go for high fat)
1 tbsp kashmiri mehti (dried fenu greek leaves)
1 normal size can of tomato sauce (300 ml-ish)
1-2 tbsp butter
Ingredients for Marinade:
700g boneless chicken thigh or breast
*Substitute with salted/unsalted paneer, cauliflower, tofu, potato etc. for a vegetarian option*
3 tbsp butter chicken masala pack
3 tbsp tandori masala pack
1 tbsp garlic paste/minced garlic cloves
1 tbsp ginger/minced ginger cloves
1 tbsp lemon juice (bottle or lemon)
Process:
Marinade chicken or vegetarian option for 1-2 days in the marinade mix.
Once ready, bake the chicken until almost done (20 minutes).
Take out and put in sauce for 10-20 minutes.
Serve with rice and any other things you want like a veggie or naan, etc.
